There were two reasons that I pulled out the AMEX from my wallet and signed for a bottle of the First Growth this weekend.

Over the CNY holiday, I started to plan for my summer vacation in Bordeaux.  After locking down on the dates, I wrote to Ch Haut Brion, Ch Margaux and Ch Latour requesting a tour of the Chateau.  I was jumping with joy when I received a positive response from Ch Haut Brion.  (more…)

Ch Simard

Chateau Ausone, one of the Premier Grand Crus from St Emilion is also the owner of Chateau Simard.   I was so pleased to have the opportunity to taste 2 vintages from this Chateau – 1990 & 2005.   It was over a European cuisine in a small cozy bistro in the quiet part of North Point. 

St Emilion wines in general have softer tannins and more body as they are Merlot based red wines. The wines were 80% Merlot and 20% Cabernet Franc. (more…)

A non-commerical Bordeaux white

What does “lifestyle” mean?  It was fun sharing my view with old acquaintances and new friends over a few glasses of wines in a cozy Bistro this past weekend.

While sharing our views, there was also a very interesting wine we shared over dinner, interesting because it is not a commercial wine.  The owner is passionate about wine and bought a small vineyard and experimenting wine making.  The 2008 Bordeaux white was from this vineyard.  (more…)

The idea of roasting a lamb from New Zealand serving with Bordeaux red was very tempting.  It wasn’t long that the idea came to fruition, with many lamb lovers and wine enthusiasts jumped with joy and joined the feast. (more…)

Following up on my plea for help on how to drink the 1975 Chateau Cantenac Brown last week, I actually got together with Madam (and a few friends) and cracked open the bottle.

Per Madam’s instructions, we didn’t really aired the wine at all and drank it somewhere between 15min to 30min after it was open and decanted (in case of sediment).

To tell the truth, I didn’t have much expectation for the wine due to the shoulder level status of the bottle – in fact, I had lots of doubts that it would actually be drinkable at all. (more…)

It was the year that JF Kennedy stepped into the Oval Office in Washington DC.

It was the year that East Germany constructed the Berlin Wall.

It was the year that “Are You Lonesome Tonight” by Elvis Presley, “Moon River” by Henry Mancini and “The Lion Sleeps Tonight” by The Tokens topped the Chart.

This dish may sound simple, but I could assure you there was lots of preparation that went behind the scene.

The duck was marinated with clove, salt and pepper for 15 hours, then slow cooked in the oven for 2 hours then grilled until brown.  After that, the skin and meat were shredded into pieces and put aside.  Next was to prepare the broth with what was left with the duck – the bones.  (more…)
