Chateau Ausone, one of the Premier Grand Crus from St Emilion is also the owner of Chateau Simard. I was so pleased to have the opportunity to taste 2 vintages from this Chateau – 1990 & 2005. It was over a European cuisine in a small cozy bistro in the quiet part of North Point.
St Emilion wines in general have softer tannins and more body as they are Merlot based red wines. The wines were 80% Merlot and 20% Cabernet Franc.
The friend that brought the red wines suggested to serve the 2005 first, it was still a young wine on the nose and palate. The tannin was soft with red fruit and a hint of spice. It was a very pleasant wine and would age well.
The 1990 vintage was breathed for 2 hours when we finally tasted it. We expected the wine to be more complex and we were right. The color also hinted the wine had an older vintage. On the palate, it showed red fruit, smoke, spice and meat. The wines were paired with Baked Escargots and Roast Lamb Shank, and we all enjoyed it!
Well, wine and dine is an relaxing way to ease off any tension during the week, glad I have always managed to live with this principle for years!
