Home Made Smoke Pigeon

Ever since we dined at the Chairman, my husband was contemplating in trying the Smoke Pigeon at home.  The Manager at the restaurant told us the tip was to smoke the pigeon with rice.

Preparation was made – live pigeon, rice, Chinese wine and Sweet Osmanthus Oolong tea. (more…)

Gin Gallery - A Room With A View

It was a tasting of Italian wines in a commercial building in TST.  The office was decorated as a wine cellar with a view of Central at a distance.   We tasted 9 wines throughout the evening, pairing with cheese and bread.

As Christmas is around the corner, there are many wine tastings in town in celebration of the holiday. 

I went to a Christmas tastings at the American Club this week.  There were around 50 wines on display.  The one wine that caught my attention was not because of its value or style, but the memory it brought…. (more…)

I have a friend that likes to collect some vintages and then store them in his (big) wine fridge for years until they are ready to drink.

This week, he was looking around and found two bottles of ’94s, a Chateau Lascombes and a Lynch Bages, which he felt was ready to drink. Luck for me, he decided to drink them.

We started with the Lascombes, which was nice, smooth and pleasant. But then came the Lynch Bages, which was AMAZING. Even after the Lascombes, the body, sophistication and complexity of the Lynch Bages came through loud and clear. (more…)

Cadet reporting to Madam, finally!

I have urged Cadet to write about his experience for some time, it was a surprise that he finally grant me the honor when I was least expected. 

The wine that I raved about upon my return from Bordeaux ….. 

I was reading the Wine Spectator before dinner over the weekend, and there was an article on Chateau Pontet Canet. It brought back memories of my visit at the Chateau this summer.  After the tour, Monsieur Alfred Tesseron greeted us with a warm smile and joined us for lunch in the main dining hall.  (more…)

This is the vineyard founded by Baron Philippe Rothschild of Ch Mouton Rothschild and Robert Mondavi in 1979.   The name Opus One was chosen by Baron Philippe – Opus, a musical analogy denoting the first masterpiece of a composer.  Hence it is the masterpiece of two wine genius from the old world and the new world. After my first post on Madam’s blog, I was going to take a break, at least for a couple days – but I just couldn’t resist. What happened was that we came across a second bottle of Pontet Canet 2002, but this time at an ultra chic hot springs hotel in the Izu area, about 2 hours outside Tokyo.

The Arcana resort is a different type of hot spring hotel. Instead of the traditional ryokan serving up traditional Japanese cuisine, the Arcana is made up of a complex in contemporary architecture styles, situated on the banks of a mountain stream, with a central restaurant serving up contemporary Japanese/French cuisine.
